Chocolate bars from our own Bean-to-Bar manufactory

Ten chocolate bars, six pure and four refined, all made from raw cocoa beans in our Berlin manufactory. No purchased couverture that is simply melted down, but true bean-to-bar chocolate made from cocoa sourced from named farms and cooperatives, from certified organic and fair-trade cultivation.

Pure or refined
The range is divided into two lines. In the pure chocolate bars line, cocoa takes center stage: single-origin bars ranging from 70% to 100% cocoa from Tanzania, Vietnam, Uganda, and Nicaragua, without ingredients that distract from the origin’s unique flavor. The refined chocolate bars line uses the same base and adds hand-sprinkled ingredients such as salt, caramel, chili, or preserved lemons. If you are unsure where to start, begin with the pure bars and then explore the combinations.

What Bean-to-Bar really means
Most chocolate bars sold in stores are made from ready-made industrial chocolate mass that is only melted, shaped, and packaged by a manufacturer. We do the opposite: sorting, roasting, cracking, conching, and tempering all take place entirely in our own facility. That is Bean-to-Bar. Because we control every step ourselves, we can tailor the roasting process to each individual origin instead of creating a standardized flavor.

Origins you can taste
Our bars are single origin, meaning the cocoa in each bar always comes from one specific, named origin. The Uganda 80% from the Semuliki Forest offers notes of dark cocoa, red wine, and cassis, while the Tanzania 70% from the Kilombero Valley leans toward fruitiness and gentle sweetness. Soil, climate, and especially fermentation after harvest shape these differences. Tasting two origins side by side quickly shows how diverse high-quality chocolate can be.

Organic, vegan, and without additives
The ingredient list of our pure chocolate bars contains only cocoa beans and raw cane sugar, making them naturally vegan without needing extra labeling. Artificial flavors, emulsifiers, or palm oil are not used in our chocolate. Those looking for chocolate without any added sugar can choose the Uganda 100%, which consists solely of cocoa.

Giving chocolate as a gift
A bar from our manufactory makes a wonderful small gift, especially because it comes with a story. A popular combination is one pure and one refined bar, allowing you to compare directly how added ingredients influence the cocoa. Those who prefer to drink their cocoa can also find the same origins as drinking chocolate.

Frequently asked questions

  • We make the chocolate ourselves from raw cocoa beans to the finished bar, instead of simply melting down ready-made industrial chocolate mass. Roasting, grinding, conching, and tempering all take place entirely in our Berlin manufactory.

  • The pure bars consist only of cocoa beans and raw cane sugar and are therefore vegan. For the refined bars, it depends on the ingredients; for example, the milk chocolate salt caramel bar contains milk components. The exact information can be found on the respective product page.

  • For those who enjoy dark chocolate, the Nicaragua 80 percent is a great place to start. Those who prefer something milder and more playful can choose the milk chocolate salt caramel. Both showcase what distinguishes artisan chocolate from standard chocolate.

  • Store it in a cool, dry, and odor-free place, ideally at 15 to 18°C. In the refrigerator, chocolate absorbs moisture and can develop a grayish coating, which is harmless but affects the texture and melt.

  • Yes, we use cocoa from certified organic and fair-trade cultivation.

Around the cocoa bean, you can also find cocoa nibs, whole cocoa beans, and our hazelnut spread under spreads, cocoa beans, and more. And you can experience how a bean becomes a chocolate bar in our Bean-to-Bar workshop at our manufactory.
