When we enter our glass factory on one of the quiet side streets in Berlin-Mitte and the scent of roasted cocoa beans fills our nostrils, we're in the right place. Not a co-working space, not a startup loft, but a workshop where we roll up our sleeves and get started.
Here, we roast, break, peel, grind, pour, and package. All by hand. Just as we have for almost two decades in the production of our organic ice cream, we work with passion, tireless precision, and uncompromising commitment when it comes to quality and ingredients. Every cocoa bean, every vanilla pod, and even the last pinch of sugar comes from certified organic farming. It's not uncommon for us to spend months searching for the perfect raw materials. Fair production conditions are also important to us, which is why we support many cooperatives and small farmer associations – from Brodowin to Guatemala.

We want you to taste “The Love of Making”.
That's why our products are full of character, vibrant, delightful, exciting, and intense. Each individual bar delivers unexpectedly complex flavors you might never have expected from chocolate. This makes every piece a surprising experience. And for this truly authentic chocolate experience, we have our small, cocoa-scented factory in Berlin-Mitte.

OUR STORY
IT ALL STARTED WITH… CHOCOLATE ICE CREAM
Rosa Canina has been synonymous with organically certified, indulgent ice cream creations made in-house – made in Berlin – since 2008. From the very beginning – when other ice cream shops still routinely used artificial flavors and additives, and "organic" was more associated with porridge than with high quality – we wanted to prove with our factory that ice cream can be delicious and surprising, while uncompromisingly using only organic ingredients.

From day one, we have worked in trust with selected partners who supply us with raw materials from certified organic and fair trade farming. During our search for the perfect chocolate for our chocolate ice cream, we discovered 31° (formerly Belyzium). Even back then, the manufacturer was one of the first in Germany to operate according to the bean-to-bar principle, sourcing high-quality cocoa beans from select farms using fair and organic farming methods. Together, we spent years developing a recipe that gives our chocolate ice cream its unmistakable flavor.
Rosa Canina and 31° share the highest standards of quality and a clear commitment to corporate responsibility. Traditional production methods, good craftsmanship, and long-standing partnerships with smallholder farmers in cocoa-growing regions – all of this is important to us and should be preserved. Therefore, two artisanal businesses with a shared vision and mission are joining forces. We are merging the tradition of 31° with our many years of expertise to create a new brand: Rosa Canina Chocolate.

Manufactory
Our factory is both a store and a café and is located on the corner of a quiet side street in Berlin-Mitte.
While enjoying a glass of hot chocolate or a mocha, you can take a look into our glass production facility and watch us make our chocolate.

Zoe's Manufactory
The heart of OUR production
Zoe loves creating chocolates and developing new varieties in the factory. While cocoa beans are being ground between the stone rollers of the melangeur, you can watch Zoe testing the quality of new cocoa beans from various origins and refining them. Or she creates new bars with a serious look, yet a loving manner.

In between, Zoe and the team are constantly testing, researching, and experimenting with new methods and products. They're often so engrossed in their work that they don't even notice when someone is watching them through the production window.

Store
Between shop & showcase room
In our light-filled store, not only a large selection of our bean-to-bar chocolates awaits your visit, but also our team of experienced chocolate makers.
When we're not pouring bars or turning hazelnuts from Piedmont into our spread, we'll tell you everything you need to know about our cocoa and chocolate over a fragrant cup of hot chocolate.
Along the way, you can taste and test everything you can think of: from bars of homemade salted lemons to our multifaceted tahini bar. If that's not enough for you, you'll learn everything in detail in one of our bean-to-bar workshops.

Cafe
Where moccachino meets stracciatella
A relaxed ice cream parlor with sunny spots in the summer, a cozy refuge for hot chocolate and a magazine in the winter: Our café offers a relaxed change from the hectic hustle and bustle of Berlin-Mitte all year round.
When the weather's hot, we serve a selection of iced chocolates, iced coffees, and various chocolate ice cream flavors made with our own chocolate, such as stracciatella or chocolate sorbet. Or you can order a moccachino and watch the hustle and bustle on the street, in the shop, and—through the glass window—in our factory.
